Dark Chocolate Pudding

The rich flavour of dark, dark Chocolate, made smooth and creamy.

2 cups (500 mL) low fat milk, divided
3 tbsp (45 mL) STEVIA IN THE RAW™ Baker’s Bag
2 tbsp (30 mL) SUGAR IN THE RAW® Natural Turbinado Sugar
2 tbsp (30 mL) cornstarch
2 tbsp (30 mL) cocoa
4 oz (110 g) dark chocolate (70%), chopped
1 tsp (5 mL) vanilla extract
1Heat 1 ¾ cups (425 mL) of milk until hot. Set aside.
2Meanwhile, combine sweetener, sugar, cornstarch and cocoa with remaining ¼ cup (50 mL) milk in a medium saucepan.
3Cook over medium heat, whisking often, until the mixture is thick enough to coat the back of a spoon, about 5 minutes. Do not let the mixture boil.
4Add the hot milk and remaining ingredients and continue cooking and stirring until thickened, about 5 minutes.
5Divide the hot pudding between 5 serving bowls and place plastic wrap directly on the surface of the pudding to prevent a skin from forming. Cool to room temperature and chill before serving.
